This week we whipped up a vegan stew that we prep here. The ingredients are simple and straight forward; onions, carrots, potatoes, parsnip and turnips. You can also substitute your own veggies too. Have a terrific weekend.

INGREDIENTS
1 onion, chopped
3 carrots, chopped
3 potatoes, chopped
1 parsnip, chopped
1 turnip, chopped
1/4 cup uncooked white rice
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon salt
2 1/2 cups water
PREPARATION
1. In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water.
2. Boil until vegetables are tender, about 30 minutes, adding more water if necessary.
3. Serve and eat
